BERGEDEL OR POTATO PATTIES

Bergedel is a malay savoury potato patties that everyone loves to eat. This recipe was obtained from a relative indonesian domestic helper. Well, she kind of roughly explained the required ingredients & cooking process. There was no exact measurement of ingredients, everything based on estimation, but tasted really good! All gone in no time at the dining table.

A simple but tasty recipe!

Ingredients:
Potato
Chicken meat (minced)
Onion (chopped & fry till golden brown)
Spring onion (chopped)
Egg (beaten)
Salt/pepper

Method:
1. Cut potato into half & deep fry till cooked. Drain away the oil.
2. In a large bowl, mesh the cooked potato, then add the chicken meat, fried onion, spring onion, salt/pepper & mix till well blended.
3. Form into small size patties.
4. Coat patties in beaten egg & pan fry till golden brown.

CHICKEN CURRY WITH ROTI PRATA


Home-cooked Curry Chicken with lots of potato goes very well with crispy roti prata.
I used 1pkt ready-made  curry paste, added another 2tbs chilli powder & 2tbs turmeric powder for that extra spicy kick!
You may follow the instructions on any curry paste packet to add the amount of water required. 
The rest would be fried potato, chicken meat, tomato, onion, curry leaves etc, and boil till all ingredients are cooked. It's that simple!!




Pan fried frozen pizza is crispy & taste good too!!

CRANEBERRY MUFFINS

It's the festive season for baking...hohoho!!


 This is my 1st try baking cranberry muffins...Yummy!!


Crispy outside & soft on the inside



Ingredients:
2 eggs
125ml melted butter or veg oil
250ml milk
200g caster sugar
400g self-raising flour
1 tsp salt
2 tsps vanila essence
100g cranberry (to soften dried cranberry; soaked in orange juice)

Method:
1. Preheat oven 200deg C.
2. In a large bowl, beat eggs lightly with handheld whisk for 2mins.
3. Add melted butter or veg oil, milk, vanilla essence, sugar & beat till batter is smooth.
4. Add sifted flour/salt & mix just blended but still lumpy.
5. Quickly mix cranberry into the batter.
6. Pour batter into cupcake & bake for 20-25 mins or till golden brown.

CHOCO MUFFINS


Freshly baked Choco Muffin smells great! You can imagine the whole house smells deliciously good when these muffins are baking in the oven...yummy yummy!! 


It's really easy & quick to bake muffins, give it a try & you'll love it!!


Ingredients:
85g wholemeal flour
12g cocoa powder
1/2 tsp baking powder
1/4 tsp baking soda
1/8 tsp salt

60g butter (softened)
60g castor sugar
1 egg
1 tsp vanilla essence
80ml milk
2 tbsp choco chips


Method:
1. Sift flour, cocoa powder, baking powder, baking soda & salt in a bowl.
2. In a separate bowl, use a hand whisk and beat butter, sugar till creamy & fluffy.
3. Add egg, vanilla essence, milk & mix well.
4. Pour the wet mixture into the sifted flour bowl & lightly fold till just combined. Add choco chips & mix well.
5. Scoop batter mixture into cupcake to 3/4 full, top with more choco chips & bake in preheated oven at 180°C for about 30mins.

*may use plain flour instead of wholemeal flour.
*may sprinkle top with some icing powder once muffin is cool down.

BANANA CREPE



This is my very 1st time in making crepe. I goggled to find the best recipe but ended with much disappointment. (Not all recipes on the internet turned out right) 
For the crepe, I topped with banana slices and drizzled some melted Hershey chocolate. This picture looks lovely & yummy, but crepe tasted dry and not so soft; sad, sad...however, I will keep this beautiful shot and try another recipe again next time.

SEGAR RESTAURANT

Recently I visited this "zichar" restaurant at Chinatown Point for a dinner with family members. Assam Curry Fish Head was highly recommended by my relatives who has tasted some of their zichar dishes not long ago. I noticed that their food portion here is rather small, enough for 2-3 persons.

Assam Curry Fish Head @$20

Assam Curry Fish Head was indeed my favourite dish. The gravy was super shiokkk...spicy and piping hot! The amount of gravy was quite a lot; good to go with the rice. The size of fish head was average, and the only setback was the limited pieces of vegetables in it. 

Sambal Kangkong @$8
I love the Sambal Kangkong! Quite spicy and delicious, but portion rather small.

Hotplate Beancurd @ $12
The Hotplate Beacurd dish was a let down...it was pale in colour and tasted average. Everyone felt it was rather expensive for this simple vegetable dish.


Bittergourd Omelet @$8

Bittergourd Omelet was rather thin, although it was spread out wide on the entire plate. I would prefer thicker in texture. 

During my dinner there, observed that many of their customers were small families or couples. There were a few big rounded tables and many smaller squared tables to cater for big and small group diners.
They do have claypot dishes, and I will try these on my next visit. Again, Assam Curry Fish Head was yummy & @$20 it was quite reasonable, no service charge here! Must try!!

Recently I was looking for a family birthday cake & was attracted to this beautifully designed coffee cake. There were 3 different coffee cake designs to choose on that day, and this particular one seems like telling me, "get me"! Well, well...indeed the right one, not too dense type, which is perfect.  The sponge cake texture is soft, lightly coffee-flavoured with fresh cream & the sweetness is just right. Everyone loves it!!
It's only $22 @medium size & included 5 paper plates/forks, plastic knife & candles! Highly recommended.

PLAIN ONION ROTI PRATA

Roti Prata is a fried flat-bread that is cooked over a flat grill. It is usually served with vegetable or meat-based curry and is from M'ysia & S'pore. Prata is also commonly cooked upon request with cheese, onion, bananas, red bean, chocolate, mushroom or egg.

On a coooool raining morning, with a plate of crispy hot roti prata & a cup of thick hot tea...really gives you a delicious shiokkk feeling!

This particular prata stall at a coffee-shop is usually with a long queue (mainly chinese clients) on every weekends & weekdays morning. It has been my favourite roti prata stall for quite a few years now, and 2 pcs of plain=kosong prata is usually my order for breakfast or even lunch! The savoury type or the sweet type; I prefer savoury type...soft on the inside & crispy on the outside. I have tried egg prata from different stalls before, but somehow each time it tasted not so crispy, think it's due to the egg coating...kosong prata is still the best!!

Well, one fine morning, the friendly indian lady seller recommended me the onion prata which is said to be lower in cholesterol and healthier!
It is wrapped with lots of onion pieces, but then it would taste a lot better if I have eaten it at the stall...hot & crispy!! As I brought them home, it turned soft and mushy. I must say that the fish curry sauce taste good, flavour not over-powering but would be even better if it is thicker in texture for coating the prata.

Although plain prata is my favourite choice, however for the sake of better health, it is good to take onion prata once in a while.

DOUBLE CHOU CREAM MATCHA PUFF

This is the 2nd time I bought Chateraise Pastisserie in less than 2 days!! I visited their latest outlet at NEX mall. It's amazing, just like in Hokkaido patisserie outlets...there are so many varieties to choose from; all look so colourful, fresh, pretty and yummy! Japanese loves to create unusual and beautiful pastry...really impressed with their lovely creative designs.

As mentioned previously, anything matcha is my favourite, thus how could I resist a bite on this piece of lovely matcha puff? The verdict: I love this double chou cream matcha puff very much. It has just a hint of sweetness and filled with lots of quality matcha flavoured cream. One piece is just not enough, it's addictive...believe me!
Looks like my diet plan has to be put on hold for awhile, as it would be very hard for me to resist this chou..ful of matcha cream puff that is my taste...less sweet. It's really worth it at only $1.90 a piece...must try!!
Oooh...still so many varieties of yummy, pretty pastry waiting for me to taste!!😋
I am so tempted to try all of them...but then, seriously I do need to remember to keep watch on my waistline!!

FLUFFY ROLL MATCHA

I love anything matcha; matcha cake, matcha latte, matcha ice-cream & the list goes on...
Recently just tasted Chateraise fluffy roll matcha and it truly has the strong quality matcha flavour, with cream & azuki red bean paste in it. It is slightly sweet for my taste bud as somehow I personally prefer less sweet stuffs.
But it's a good buy @$1.90 for a piece of Japanese yummy matcha roll!! 😋

BANANA CHIFFON CAKE

chiffon cake is a very light cake made with vegetable oil, eggs, sugar, flour, baking powder, and flavorings. It is a combination of both batter and foam type (sponge type) cakes.
Instead of the traditional cake ingredient butter, vegetable oil is used; but this is difficult to beat enough air into. Therefore, chiffon cakes, like angel cakes and other foam cakes, achieve a fluffy texture by having egg whites beaten until stiff and folded them into the cake batter before baking. They can be baked in tube pans or layered with fillings and frostings.


I've tried countless of times & finally succeeded baking this very light, soft & fluffy banana chiffon.

Ingredients A:
2-3 ripe bananas (blend till smooth)
4 egg yolks
70g castor sugar
5 tbsp corn oil
150g cake flour
1/4 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt
1/2 tsp vanilla essence

Ingredients B:

5 egg whites
70g castor sugar
1 tsp lemon juice

Method:

Mixture A
1. Beat egg yolks, sugar, salt, corn oil & vanilla essence till mixture is thick.
2. Add sifted cake flour/baking powder/baking soda; use a whisk & hand-stir in one direction till smooth & combined.

Mixture B

1. Whisk egg whites & lemon juice.
2. Slowly add sugar & continue whisk till stiff peak but not dry.
3. Lightly fold Mixture B to Mixture A.
4. Pour into a 22cm chiffon cake tin, bake in pre-heated oven @150°C for 30 mins & increase to 180°C, continue to bake till golden brown. 
5. Remove from oven & invert chiffon to cool.

**Note: To cover chiffon top with aluminium foil if top is lightly brown when half-way baking in oven,  so as to prevent over-burned on chiffon top.
